Carne Asada Tacos

The Story
A classic Mexican street taco. The key is a good marinade for the steak and fresh, simple toppings.
Ingredients
- Flank or skirt steak- 1kg
- For the marinade: Orange juice- 1/2 cup
- For the marinade: Lime juice- 1/4 cup
- For the marinade: Soy sauce- 1/4 cup
- For the marinade: Minced garlic- 4 cloves
- For the marinade: Chopped cilantro- 1/2 cup
- Corn tortillas- 12
- For topping: Diced white onion, chopped cilantro, salsa, lime wedges
Instructions

In a bowl, whisk together all the marinade ingredients.

Place the steak in a resealable bag or shallow dish and pour the marinade over it. Marinate for at least 2 hours, or up to 8 hours.

Preheat a grill to high heat.

Remove the steak from the marinade and grill for 3-5 minutes per side for medium-rare, depending on the thickness.

Let the steak rest for 10 minutes before slicing it against the grain.

Warm the corn tortillas on the grill or in a pan.

To assemble the tacos, place some sliced carne asada on a warm tortilla.

Top with diced onion, cilantro, and your favorite salsa. Serve with lime wedges.
