Simple Shakshuka

The Story
A one-pan meal that's perfect for breakfast, lunch, or dinner. It's quick, easy, and incredibly flavorful.
Ingredients
- Olive oil- 2 tbsp
- Onion, chopped- 1
- Bell pepper, chopped- 1
- Garlic cloves, minced- 3
- Crushed tomatoes- 800g can
- Ground cumin- 1 tsp
- Paprika- 1 tsp
- Chili flakes- 1/2 tsp (optional)
- Eggs- 4-6
- Fresh cilantro or parsley, chopped- for garnish
- Feta cheese, crumbled- for garnish
Instructions

Heat olive oil in a large skillet over medium heat. Add the onion and bell pepper and cook until softened.

Stir in the garlic and cook for another minute.

Pour in the crushed tomatoes and add the cumin, paprika, and chili flakes. Season with salt and pepper.

Simmer for 10-15 minutes, until the sauce has thickened slightly.

Make small wells in the sauce and crack an egg into each one.

Cover the skillet and cook for 5-8 minutes, or until the eggs are cooked to your liking.

Garnish with fresh herbs and feta cheese.

Serve immediately with crusty bread for dipping.
