Homemade Falafel
Approx. 45 minutes (plus soaking time)
The Story
A classic street food that's easy to make at home. Soaking the chickpeas overnight is the key to the right texture.
Ingredients
- Dried chickpeas- 1 cup
- Onion, roughly chopped- 1/2
- Garlic cloves- 3
- Fresh parsley, chopped- 1/2 cup
- Fresh cilantro, chopped- 1/2 cup
- Ground cumin- 1 tsp
- Ground coriander- 1 tsp
- Baking soda- 1/2 tsp
- Salt and pepper- to taste
- Vegetable oil- for frying
Instructions

Soak the dried chickpeas in water overnight. Do not use canned chickpeas.

Drain the chickpeas and add them to a food processor with the onion, garlic, parsley, and cilantro.

Pulse until the mixture is finely chopped but not a paste.

Transfer the mixture to a bowl and stir in the cumin, coriander, baking soda, salt, and pepper.

Cover and refrigerate for at least 30 minutes.

Form the mixture into small balls or patties.

Heat vegetable oil in a deep pan and fry the falafel in batches until golden brown and crispy.

Drain on paper towels.
Serving Suggestions
Serve hot in pita bread with tahini sauce, salad, and pickles.
